Roasted Patty Pan Squash


Keep it simple and satisfying.

Ingredients:

1-1/4 lb squash

1 tbsp olive oil

2 minced garlic cloves

1/2 tsp salt

1/4 tsp dried oregano

1/4 tsp dried thyme

1/4 tsp pepper

Directions:

1. Preheat oven to 425

2. Toss chopped squash with oil and spices and spread onto baking pan

3. Roast for 15-20 minutes, stirring halfway through
