Green Tomato Salsa Verde

Change up taco Tuesday with homemade fresh salsa

Ingredients:

2 c cored green tomatoes

1/2 c chopped onion

2 cloves garlic

1/4 c cilantro

pinch of salt

1 jalapeño

sugar to taste

dash of cumin

Directions:

1. Place chopped tomatoes, onion, jalapeño, and garlic in food processor and pulse until chopped fine. Add to soup pot with lime juice and simmer for 5-10 min.

2. Add chopped cilantro, salt and cumin once cooled. Add sugar to taste if desired to cut any bitterness.

*Good for freezing or canning as well.
